Do I have to configure the users and permissions each time I want to protect a document?

No. If you are going to protect certain documents the same way in the future, you can create a “protection” (or protection policy). It can be created in just a few seconds, indicating the users, permissions, etc. Then it is available to protect all the documents you want.
